Looking for an ice cream sandwich recipe that's great for kids? Miniature waffles and gelato make a fun little summer snack. Here is how we made them:
1 Box Miniature Frozen Waffles (such as Eggo Waffles)
1 Pint Gelato ( we used Madisono's Bananas Foster Gelato)
1 Cup Semi Sweet Chocolate Chips
1 Tbsp Vegetable Oil
Small spoon or ice cream scoop
Use a sharp knife to detach miniature waffles. Place about a tablespoon of gelato onto one side of the waffle. Top with another waffle and squish down slightly. Set on a baking sheet lined with parchment paper. Repeat with all waffles and freeze for at least an hour.
Melt chocolate in a double boiler or in a glass bowl over a pan of simmering water. Once the chocolate is melted, add vegetable oil and stir until smooth. Remove from heat. Dip frozen waffle sandwiches half way in the chocolate, add sprinkles and put back on the baking sheet to re-freeze. Enjoy!
